Hop soda syrup with a touch of bitterness. Refreshing as a lemonade, but you should try it with a shot of gin as well. I've used foraged hops, but you can use any hop you like. Every hop has its own taste.

If you're using screw top juice bottles you can turn them upside down for 5 minutes, just like you would with a jam, then turn back and let cool.
Unopened this should last at least a year in a dark cupboard. Keep the syrup in the fridge once opened.

You’ll need
375 ml water
375 g sugar
3-5 g dried hops, depending on your taste
1-2 lemons, juice only (depending on size of lemons)
1 sterilised juice/syrup bottle (holding 500ml)

- Bring water and hops to a boil, let boil for about a minute, then turn off the heat, cover and let simmer for another 10 minutes.
- Now add the lemon juice.
- Strain into a clean saucepan and add the sugar.
- Bring to a boil once more, stirring until the sugar has dissolved completely, then bottle.
