hop pop syrup

Hop soda syrup with a touch of bitterness. Refreshing as a lemonade,  but you should try it with a shot of gin as well. I've used foraged hops, but you can use any hop you like. Every hop has its own taste.

this will make half a litre of syrup, plus a bit to try right away


You’ll need


375 ml water
375 g sugar
3-5 g dried hops, depending on your taste
1-2 lemons, juice only (depending on size of lemons)

1 sterilised juice/syrup bottle (holding 500ml)

  1. Bring water and hops to a boil, let boil for about a minute, then turn off the heat, cover and let simmer for another 10 minutes.
  2. Now add the lemon juice.
  3. Strain into a clean saucepan and add the sugar. 
  4. Bring to a boil once more, stirring until the sugar has dissolved completely, then bottle.

If you're using screw top juice bottles you can turn them upside down for 5 minutes, just like you would with a jam, then turn back and let cool.

Unopened this should last at least a year in a dark cupboard. Keep the syrup in the fridge once opened.
